This different dish from south of the border is a great taste treat.
Ingredients:
1 tbsp olive oil
1 small onion, finely chopped
1 large tbsp roasted garlic puree
1 smoked jalapeno, seeded & minced
1 large diced tomato
1 ½ pounds huitlacoche
2 tbsp chopped cilantro
1 - 2 cups white cheddar cheese
salt and pepper, to taste
flour tortillas
optional garnish
hickory smoked tomato salsa
hickory smoked jalapeno cream
fresh cilantro
lime wedges
Method:
Heat the oil over medium heat in a large skillet. Add the onion and saute for 5 minutes. Add the jalapenos, tomato & roasted garlic and cook for another minute or so. Add the huitlacoche, cover the skillet and cook for 15 minutes. Stir in the cilantro & season with salt and pepper and cook for another few minutes.
For quesadillas, place some of the filling on one half of a flour tortilla. Sprinkle over some of the white cheddar. Fold over and saute in a small amount of olive oil or bake in a 350 F for 10-20 minutes or until the filling is warmed & cheese is melted.
Serve with the optional hickory smoked tomato salsa, jalapeno sour cream, cilantro & lime wedges.

This all sounds so delicious but what is huitlacoche?
Sonia,
It's also known as corn smut, which doesn't sound nearly as romantic or appetizing.
Thanks for watching.
