Mashed Sweet Potatoes with Horseradish (Show #414)

Serving Size: 3 lbs

Ingredients:

3 lb. large sweet potatoes
1/4 cup unsalted "sweet" butter
1 teaspoon sea salt
2 tablespoons maple syrup, preferably from Michigan
2 tablespoons horseradish, prepared in vinegar, drained

Directions:

Preheat the oven to 400 degrees F.

Place sweet potatoes on a baking sheet and roast until easily pierced with a fork, about 1 hour.

Peel the sweet potatoes while still hot. Combine the potatoes, butter, maple syrup, and horseradish in a large bowl.

Mash with a potato masher until the potatoes are smooth. Serve immediately.

    Love the show!Lived in Michigan for 45 years and learn more about it from watching your show every week. Moved from Eaton Rapids to Waterford and happy to find your show on the local PBS station.
