Herb Vinegarette (Show #308)

Great for all types of salad

Ingredients:

1/4 cup champagne vinegar

2 tablespoons shallots, minced

1 tablespoon roasted garlic, puree

1/4 cup assorted fresh herbs, chopped

1 teaspoon sea salt, or to taste

black pepper

Clancy's Fancy Hot Sauce, optional

3/4 cup evcp olive oil

Directions:

Combine the vinegar, shallots, garlic, herbs, salt, pepper and the optional hot sauce in a bowl. Let sit for at least one hour for flavors to meld. Slowly whisk in the oil and continue whisking until thoroughly emulsified. Store, refrigerated, in an airtight container for 3 days. Whisk to combine before serving
