Ingredients:
1 cup fresh carrot juice
1 1-inch long piece of ginger, peeled & bruised
1 tbsp. fresh lime juice
1 shot Clancy's Fancy Hot Sauce
sea salt, to taste
1 tbsp. unsalted "sweet" butter, cold
Directions:
Place the carrot juice, ginger, lime juice, hot sauce and salt in a small non reactive sauce pot over medium high heat. Reduce by half until juice starts to thicken. Add the cold butter and shake the pan to incorporate the butter and emulsify the sauce. Taste and adjust seasonings as necessary. Use immediately.
Notes:
Juicing fresh carrots with a juicer is best, now many grocery stores are selling fresh carrot juice.
One pound of carrots will make approximately six to eight ounces of carrot juice.
Drink juice immediately or within a few days. Carrot juice does not keep for long and tastes best when fresh.
