A great way to serve this great vegetable. We featured it in Show #112 with our very special Pork Tenderloin and Garlic Mashed Potatoes.
Ingredients:
1 1/2 lbs broccoli rabe,
stems trimmed then coarsely chopped
french sea salt, to taste
1/2 tsp crushed red pepper flakes
2 tbsp evcp olive oil
1 lemon, zested and juiced
3 cloves of garlic, chopped, optional
Method:
Bring 1-inch of water to a boil in a deep skillet. Add the rabe and season with the salt, reduce the heat to a simmer and cook for 5- 10 minutes or until the broccoli rabe is crisp but tender. Drain the rabe and refresh in ice water.
Return the pan to the heat and saute the crushed pepper with the optional garlic in the olive oil over moderate heat for 1 to 2 minutes. Add the drained rabe and coat with the infused garlic oil. Cook the rabe for about 2 minutes to heat through and remove from heat.
Pour the lemon juice over the pan and sprinkle in the zest. Toss the rabe to distribute the lemon flavor and use immediatley.
