Baked Sweet Potatoes with Maple, Marshmallows and Bourbon

Ingredients:

6 large sweet potatoes, baked, peeled, and mashed
3 large eggs, preferably from michigan
1 1/4 cup whole milk, preferably from michigan
1/4 cup high quality bourbon
1 cup maple syrup grade "b", or to taste, preferably from michigan
1-2 tablespoons kosher salt, or to taste, preferably from michigan
1 teaspoon saigon cinnamon, or similar
1/2 teaspoon allspice
2 teaspoons pure vanilla extract
artisan mini-marshmallows, or similar

Directions:

Mix all ingredients well; beat well, until light and fluffy. If needed add a little more milk.

Spoon sweet potato mixture into a buttered casserole dish; bake at 350° until set, about 20 to 30 minutes.

Garnish with marshmallows and bake until marshmallows melt and just begin to brown.

Serves 8-10
