Handcrafted Strawberry Liquor

Recipe By: ©2008 eric villegas

Ingredients:

2 cups fresh strawberries, cleaned and hulled, preferably from michigan
1 1/2 cups vodka, preferably from michigan
1 1/2 cups beet sugar simple syrup, see recipe (half the recipe)

Directions:

Slice the cleaned and hulled strawberries thinly and place into a clean glass jar and top off with the the vodka.

Let stand 24 hours, shaking it periodically. The strawberries will begin to loose their color as the alcohol leaches out the taste and fragrance.

After 24 hours using a fine mesh strainer, strain the strawberries and seeds thoroughly from the vodka into a 2-quart glass container and discard the remains.

Add the cooled beet sugar simple syrup to the infused vodka.

The strawberry liquor can be used immediately but improves in flavor if stored in the freezer for a week to mellow.

Best stored in freezer and served ice cold.
