Coleslaw with Smoked Vinegar, Maple & Peanuts

Ingredients:
4 cups napa cabbage, thinly sliced
1/2 cup thinly sliced green onions
1/4 cup pickled ginger, drained
3 tablespoons hickory smoked apple cider vinegar, see recipe, preferably from michigan
1 tablespoon maple syrup grade "b", preferably from michigan
2 tablespoons a simple roasted garlic oil, see recipe, preferably from michigan
1 teaspoon toasted sesame oil
1 cup roasted peanuts
Directions:
Combine cabbage and green onions in large bowl. Add vinegar, peanut oil, ginger, sesame oil, and sugar and toss to blend. Season to taste with salt and pepper. (Can be prepared 2 hours ahead. Cover and refrigerate. Toss before continuing.) Sprinkle with sesame seeds and serve.
