Fresh Raspberry Vinegar (Show #305)

A fresh, fruity vinegar for salads and many other dishes.

Ingredients:

1/2 pint Michigan raspberries, fresh or frozen
1/2 cup beet sugar simple syrup, (see recipe)
sea salt
1/4 cup champagne vinegar, 6 % acidity

Directions:

Place the the fresh or frozen Michigan rapsberries, beet sugar simple syrup and sea salt in a blender or food processor and puree. Add vinegar and taste for balance. Add more vinegar and thin with water if necessary. Strain through a fine strainer into a bowl or pitcher.

Use as needed.
